Almond Flour Chocolate Chip Cookies

- 2 cups Blanched Almond Flour
- 1/4 cup Coconut Oil, melted (olive oil should work here as well)
- 1/4 cup Maple Syrup (or agave or another liquid sweetener)
- 1/4 tsp. Salt
- 1/2 tsp. Baking Soda
- 1 tsp. Apple Cider Vinegar (white vinegar will work too)
- 2 tsp. Vanilla Extract
- 1/2 tsp. Cinnamon
- 1/2 cup Vegan Chocolate Chips
Preheat your oven to 275°F (135°C) and line a baking sheet with parchment paper.
In a bowl, add the almond flour, coconut oil, salt, baking soda, vinegar, vanilla, and cinnamon. Combine well, using a spoon or hand mixer.
Fold in the chocolate chips.
Use a spoon to drop the batter on the baking sheet in approximately 2 tablespoon portions.
Bake for 30 minutes, or until golden-brown.
Allow the cookies to cool and enjoy!
