Ingredients

  • 2 cups Blanched Almond Flour
  • 1/4 cup Coconut Oil, melted (olive oil should work here as well)
  • 1/4 cup Maple Syrup (or agave or another liquid sweetener)
  • 1/4 tsp. Salt
  • 1/2 tsp. Baking Soda
  • 1 tsp. Apple Cider Vinegar (white vinegar will work too)
  • 2 tsp. Vanilla Extract
  • 1/2 tsp. Cinnamon
  • 1/2 cup Vegan Chocolate Chips

Instructions

  • Preheat your oven to 275°F (135°C) and line a baking sheet with parchment paper.
  • In a bowl, add the almond flour, coconut oil, salt, baking soda, vinegar, vanilla, and cinnamon. Combine well, using a spoon or hand mixer.
  • Fold in the chocolate chips.
  • Use a spoon to drop the batter on the baking sheet in approximately 2 tablespoon portions.
  • Bake for 30 minutes, or until golden-brown.
  • Allow the cookies to cool and enjoy!
