Vegan Waffles – Crispy and Delicious!

I absolutely love making “special breakfasts” on the weekends when I have more time to make an extra tasty meal in the morning and waffles are one of my all-time favorites.

These waffles are nice and crispy on the outside and fluffy on the inside. They have a mix of white and wheat flour to include more whole grains and also taste delicious!

For this recipe, you will be making a vegan “buttermilk” by combining soy milk with apple cider vinegar, as well as a “flax egg.” Both of these are easy plant-based swaps that are key in making these delicious vegan waffles and are perfect for your vegan baking tool-box!

I love enjoying my waffles topped with plenty of fresh fruit, as well as maple syrup and vegan butter.

If you have leftovers, freeze them and use a toaster to reheat as needed!

Equipment

  • Waffle Iron

Ingredients

  • 1 ¾ cups Soy Milk (or other plant-based milk)
  • 1 tbsp Apple Cider Vinegar
  • 2 tbsp Ground Flaxseed
  • 5 tbsp Water
  • 1 cup Whole Wheat Flour
  • ¾ cup All Purpose Flour
  • 1 tbsp Baking Powder
  • ½ tsp Salt
  • 3 tbsp Cane Sugar or Coconut Sugar
  • 2 tbsp Melted Coconut Oil (or other oil)
  • 1 tsp Vanilla Extract
  • ½ tsp Cinnamon

Instructions

  • Heat up your waffle iron while you prepare the following ingredients.
  • Combine the soy milk and apple cider vinegar and allow this to sit for a few minutes, until it begins to curdle. This is your vegan “buttermilk” mixture.
  • In a small bowl, mix the ground flaxseed and water until well combined and allow this to rest for about 10-15 minutes, until it thickens.
  • In a large bowl, combine the flour, baking powder, salt, sugar, and cinnamon.
  • To the same bowl, add the coconut oil, vanilla, soy milk mixture, and flax mixture and whisk until thoroughly combined.
  • Spray the heated waffle iron with cooking spray and scoop or pour the appropriate amount of waffle batter onto the iron. Cook according to your waffle iron’s settings and keep warm in the oven while the rest are cooking.
  • Enjoy with your favorite toppings, such as vegan butter, fresh fruit, maple syrup, or whipped topping!

Notes

Have left overs? You can easily freeze the waffles and reheat them in the toaster for a snack or breakfast later on!
