Avocado toast is a classic, easy go-to for a quick meal or snack. If you find yourself enjoying avo-toast a lot and feel like switching it up, try this twist which has more protein and fiber for an even more filling meal.
These seasonings and toppings can be adjusted to fit whatever you are craving or what you have on hand in your kitchen.
This is delicious with any bread, but my favorites are a hearty grain and seed bread or a sourdough.
White Bean Avocado Toast
A twist on the classic avocado toast with some added plant-based protein!
Servings: 6 Pieces of Toast
Ingredients
- 1 can Cannellini Beans rinsed and drained (another white bean will work here too), about 1.5 cups
- 1 extra large Avocado
- 1/2 tsp Garlic Powder
- 1/2 tsp Onion Powder
- 1/2 tsp Paprika
- 1/4 – 1/2 tsp Sea Salt (more or less, to taste)
- 1/4 tsp Black Pepper
- 6 slices Your Favorite Bread such as a hearty wheat or a sourdough (more or less, depending on how much avocado you like to add)
Optional
- 1 Tomato thinly sliced (for optional topping)
- Balsamic Reduction Sauce for drizzling overtop (optional, but very delicious!)*
Instructions
- Mash the rinsed and drained cannellini beans in a small bowl or pulse in a blender if you want them to be more smooth.
- Add the avocado to the bowl and mash it while combining it with the beans. Stir in the spices.
- Toast the bread and add a generous layer of the bean and avocado mixture to the top. Top with your favorite avo-toast toppings– I used tomatoes and a balsamic reduction drizzle!
